About the Oven Temperature Converter converter
Recipes assume whichever oven the writer had. British ones give gas marks, American ones give Fahrenheit, and half of modern kitchens have a fan oven that runs hotter than either.
Type any of them and get the rest, including what to set a fan oven to.
Fan ovens run hotter than the dial says
A fan circulates the air, so heat reaches the food faster than in a still oven at the same temperature. The standard adjustment is to set a fan oven about 20 °C below whatever a conventional recipe asks for.
Ignoring it is the usual reason a cake browns too fast and stays raw in the middle. Some ovens do the adjustment internally and are marked accordingly — if yours has a fan symbol next to the temperature dial, check the manual before adjusting twice.
Gas marks are a scale of their own
Gas marks run from ¼ to 9, roughly 110 °C to 240 °C. They are not linear against Celsius: the steps are 10 °C apart at the bottom and 20 °C apart at the top.
Because of that, no formula converts them — it is a lookup table, and the one used here is the conventional chart printed in British cookbooks.
The chart is rounded on purpose
180 °C is exactly 356 °F, but every cookbook prints 350 °F, because oven dials are marked in fifties and no domestic oven holds a temperature that precisely anyway.
Both figures are shown: the exact conversion, and the rounded one the chart uses. A 6 °F difference is well inside the swing of a normal oven as its thermostat cycles.
Frequently asked questions
What is 180 °C in Fahrenheit?
356 °F exactly, printed as 350 °F in recipes. That is gas mark 4, or 160 °C in a fan oven.
Should I trust my oven dial?
Not entirely. Domestic ovens are commonly 10–20 °C out, and the temperature swings as the thermostat cycles. A cheap oven thermometer is the only way to know, and often explains why baking never quite works.
Do I adjust the time as well as the temperature for a fan oven?
Usually a little. With the temperature dropped by 20 °C, most things cook in roughly the same time or slightly less. Start checking a few minutes early the first time you make something.
Do I need an account?
No, and there is nothing to sign up for. The conversion happens in your browser, so it also works with the wifi off — handy when the kitchen has bad signal.
